2 cups tosted black rice
1-2 cups tosted black beans
1/3 cup dried mushrooms soak in warm water
Celery to taste
2 or more tomatoes
1 pepper any color you want
1 teaspoon thyme
1/4 teaspoon romero
Sea salt to taste
1 teaspoon curry
1-2 tablespoon coconut oil or the oil of your preference
While tosting the rice and the beans, soak the mushroom in warn water. Boiled enought water (two cups of hot water for each cup of dried rice and beans).
Mix the rice and beans, add the hot water and the rest of the ingredients. When boiling, turn the heat to medium and let it cook for about 10 minutes. Then turn the heat to low and allow it to cook covered for about 15-20 more minutes. When done, add 1-2 tablespoons of the oil of your choice.
